Division of Prosecco according to quality
In 1962, the organization Consorzio di Tutela del Prosecco di Conegliano Valdobbiadene was founded, which aims to protect and promote Prosecco. 7 years later, the DOC production zone was recognized and in 2009 this zone was classified with the highest quality Denominazione di Origine controlli e Garantita (DOCG).
Prosecco DOCG
Prosecco DOCG comes exclusively from the hills between the towns of Valdobbiadene and Conegliano, it is made mainly from the Glera variety with the possibility of blending with the Verdisa, Perera or Bianchetto varieties. You can find this Prosecco in Extra Brut, Brut, Extra Dry and Dry versions, classified according to the level of residual sugar.
Prosecco DOCG Rive and Cartizze
Rive refers to the steep slopes where the best quality vineyards are located. Yields are limited and harvesting is done exclusively by hand. Cartizze is the absolute pinnacle of Prosecco, coming from the steepest slopes and outstanding for its unique microclimate and soils.
How Prosecco is made
The production of Prosecco involves secondary fermentation in pressure tanks, which is the main difference from Champagne. This process, known as the Charmat or Martinotti method, gives Prosecco its characteristic fine bubbles.

How to store and serve Prosecco
Prosecco should be stored in a cool and dry place, away from light and heat sources. It is served at a temperature between 6° and 8°C in stemmed tulip glasses, which will allow you to appreciate its rich aroma.
